For Pattice:
- 7-8 Boiled & Grated Potatoes
- ¾ Cup of Bread Crumbs
- 1 Teaspoon Roasted Cumin Seed (Jeera) Powder
- 1 Teaspoon Chaat Masala
- 2-3 Teaspoons of Green Chilli (Hari Mirch) Paste
- Salt
- 300 Grams of White Peas (Safed Matar)
- ½ Teaspoon Red Chilli (Lal Mirch) Powder
- ½ Teaspoon Turmeric Powder (Haldi)
- 1 Teaspoon Garam Masala
- 2-3 Teaspoons Green Chilli- Ginger (Hari Mirch-Adrak) Paste
- Coriander Leaves (Dhania)
- Salt
- Green Chutney
- Dates-Tamarind (Khajur Imli) Chutney
- Lengthwise Chopped Onions
- Coriander Leaves (Dhania)
- Boil the white peas (300 grams) with turmeric powder and salt. We will use these peas for stuffing and also for making ragda.
- In a mixing bowl take grated potatoes add roasted cumin seed powder, chaat masala, green chilli paste, salt and bread crumbs. Mix well.
- Take some potato mixture and prepare a cavity and fill in the boiled white peas. Close the ends make a ball and prepare the pattice.
- Shallow fry the pattices in the oil. Fry them well till they turn golden brown on both sides.
- For ragda take the previously boiled white peas, add water used to boil the white peas as per requirement and mix well. Now add red chilli powder, garam masala, green chilli-gigner paste and mix well. Add salt and stir till it starts to boil. Complete it with some coriander leaves.
- Now serve the petis in a plate and pour some ragda over it. Add some dates-tamarind chutney, green chutney, chopped onions and some coriander leaves. Ragda Petis ready to eat.
