For Potato Filling:
  • 5-6 Boiled & Mashed Potatoes
  • 1-1.5 Green Chili (Hari Mirch) Paste
  • 1 Teaspoon Mustard Seeds (Rai)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • ½ Teaspoon Asafoetida (Hing)
  • 8-10 Curry Leaves (Kadi Patta)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • Juice of 1 Lemon
  • Coriander Leaves (Dhania)
  • Salt
For Batter:
  • 2 Cups of Gram Flour (Besan)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1 Teaspoon Red Chili (Lal Mirch) Powder
  • Salt
  • Water
For Preparation:
  • Pavs
  • Butter
  • Vada Pav Chutney
  1. For the potato filling, heat some oil and add mustard seeds, cumin seeds, curry leaves, asafoetida and green chili paste. Sauté it well.
  2. Add turmeric powder and mix well.
  3. Add boiled and mashed potatoes and mix well.
  4. Add lemon juice, salt and generous amount of coriander leaves. Mix and let it cook for 2-3 minutes.
  5. Let the mixture cool down and then make vadas out of it.
  6. For the batter in a mixing bowl add gram flour, turmeric powder, red chili powder, salt and water.
  7. Prepare a smooth batter.
  8. Dip the vadas in the batter and deep fry them.
  9. Now on a tawa, melt some butter and add vada pav chutney to it.
  10. Know cut open a pav and roast it in the chutney and butter recipe.
  11. Place the vada between the pav and roast a bit from both sides.
  12. Ahmedabad Karnavati Vada Pav is ready.
