Instant Marcha Nu Athanu - Quick Recipe to Make Hari Mirch ka Achar by Gujarati Rasoi

Pickles or Athanu (as called in Gujarati) are synonymous with the Summer season. Every season we dry the pickled vegetables on our terrace and enjoy them throughout the year. But in today’s hectic schedule it is difficult to prepare pickles as drying requires time and even days. Hence, in this recipe will show you a quick recipe of pickle.
We will be preparing Instant Marcha Nu Athanu i.e. Mirchi ka Achar. This athanu recipe can be prepared instantly and can be stored in the refrigerator.
  • Green Chillies
  • 2-3 Teaspoons Split Mustard Seeds (Rai Na Kuria)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • 1 Teaspoon Fenugreek Seeds (Methi Dana)
  • 1 Teaspoon Fennel Seeds (Saunf)
  • ¾ Teaspoon Turmeric Powder (Haldi)
  • ¾ Teaspoon Asafoetida (Hing)
  • 4 Teaspoons Vinegar
  • 4 Teaspoons Warm Oil 
  • Salt
  1. Cut green chillies into pieces for making pickle.
  2. Roast cumin seeds, fenugreek seeds and fennel seeds. Grind them coarsely.
  3. In a mixing bowl take the previously chopped green chillies and add turmeric powder, asafoetida, previously prepared powder, split mustard seeds, salt, vinegar and warm oil. Mix well.
  4. Instant Marcha Na Athanu is ready.
