  • 2 Brinjals (Baingan)
  • 1 Chopped Tomato
  • 100 Grams Green Garlic (Hara Lehsun)
  • 250 Grams Chopped Spring Onions
  • 2 Chopped Onions
  • 2 Teaspoon Green Chilli-Ginger (Hari Mirch- Adrak) Paste
  • 1 Teaspoon Cumin Seeds (Jeera)
  • ½ Teaspoon Asafoetida (Hing)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • ½ Teaspoon Garam Masala
  • ½ Teaspoon Red Chilli (Lal Mirch) Powder
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • Oil
Procedure:
  1. Apply some oil to brinjals and roast it well on the gas flame.
  2. Now remove the burnt skin and stem of the brinjals and mash them.
  3. Now heat some oil and add cumin seeds, asafoetida, turmeric powder and stir well.
  4. Add chopped onions and stir till it turns transparent.
  5. Add spring onions and sauté it well.
  6. Add green chilli-ginger paste, finely chopped green garlic and chopped tomato. Stir till it is cooked well.
  7. Add garam masala, red chilli powder, dhana jeera powder and mashed brinjals. Mix well.
  8. Add salt as per taste and mix well.
  9. Close lid and cook for 2-3 minutes.
  10. Village Style Ringan No Olo is ready, enjoy with bajra na rotlo.
