Methi Ringan Nu Shaak consists of fenugreek and brinjals cooked in traditional Gujarati spices. This recipe is very quick to make and can be an excellent lunch recipe to enjoy. Though both the vegetables are disliked by many but this recipe would surely change their mind. Recipe: Ingredients:
  • 500 Grams Fenugreek (Methi)
  • 150 Grams Chopped Brinjals (Baingan)
  • 8-10 Garlic Cloves (Lehsun)
  • 7-8 Finely Chopped Green Chillies (Hari Mirch)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • ½ Teaspoon Asafoetida (Hing)
  • Oil
Procedure:
  1. Heat some oil and add garlic cloves, cumin seeds and asafoetida. Stir well.
  2. Add chopped green chillies and sauté it well.
  3. Add chopped brinjals and mix well.
  4. Close lid and cook for 2-3 minutes.
  5. Now add fenugreek leaves and mix well. Stir well an let it settle down.
  6. Add salt as per taste and mix well.
  7. Close lid and cook well.
  8. Methi Ringan Nu Shaak is ready to eat.
