Chapdi Undhiyu (Tavo) Recipe | Uttarayan Special Recipe | Gujarati Rasoi

Chapdi Undhiyu Rajkot Street food recipe consists of crunchy chapdi and the traditional Gujarati Undhiyu recipe. Chapdi Undhiyu banavani rit is very easy and is prominently enjoyed during the winter season. The Undhiyu prepared in this recipe is different from the Surti Undhiyu. This Tavo Undhiyu consists of vegetables like valor papdi, cauliflower, green peas, potatoes, brinjals and some boiled sprouts cooked in traditional spices. Recipe: Ingredients: For Chapdi:
  • 2 Cups of Coarse Wheat Flour (Gehun Ka Karakara Atta)
  • ¼ Cup of Semolina (Suji)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • 1 Teaspoon Fennel Seeds (Saunf)
  • 1 Teaspoon White Sesame Seeds (Safed Til)
  • 3 Tablespoons Oil
  • Salt
  • Water
For Undhiyu:
  • 150 Grams Valor Papdi
  • 50 Grams Boiled Mix Sprouts
  • 150 Grams Chopped Cauliflower (Phool Gobi)
  • 150 Grams Diced Brinjals (Baingan)
  • 150 Grams Green Peas (Matar)
  • 2 Diced Potatoes
  • Paste of 2 Onions
  • Puree of 2 Tomatoes
  • 2 Teaspoons Ginger Garlic (Adrak-Lehsun) Paste
  • 4-5 Black Peppercorns (Sabut Kali Mirch)
  • 2 Star Anise (Chakri Phool)
  • 2 Bay Leaves (Tej Patta)
  • 4-5 Cloves (Laung)
  • 2 Cinnamon Sticks (Dalchini)
  • 2 Dried Red Chillies (Sukhi Lal Mirch)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 2 Teaspoons Dhana Jeera Powder
  • 2 Teaspoons Red Chilli (Lal Mirch) Powder
  • 1 Teaspoon Garam Masala
  • Juice of ½ Lemon
  • Coriander Leaves (Dhania)
  • Salt
  • Water
  • Oil
For Tadka:
  • 1 Teaspoon Red Chilli (Lal Mirch) Powder
  • Oil
Procedure:
  1. For the chapdi in a mixing bowl take some karakara wheat flour, semolina, cumin seeds, fennel seeds, sesame seeds, oil, salt, water. Knead a firm dough for the chapdis.
  2. Now with the help of your palm make flat chapdis.
  3. Deep fry them in oil till they become nice golden brown.
  4. Now for Undhiyu, heat some oil and add black peppercorns, star anise, cloves, cinnamon sticks and dried red chillies. Stir it well.
  5. Add onion paste and fry it well.
  6. Add ginger garlic paste and stir well.
  7. Add tomato puree and sauté it well.
  8. Now add turmeric powder, red chilli powder, dhana jeera powder and garam masala. Mix well.
  9. Add cauliflower, potatoes, brinjals, green peas, valor papdi and mix well.
  10. Close lid and cook for 15-20 minutes on a low flame.
  11. Add mixed sprouts, salt and water. Mix well.
  12. Add lemon juice and some coriander leaves.
  13. For the tadka heat some oil, switch off the gas and add red chilli powder and mix well.
  14. Pour this tadka over the Unhiyu
  15. Tavo Chapdi Undhiyu is ready to eat.
