Karela Nu Shaak | Kaju Karela Nu Shaak | Gujarati Rasoi

Kaju Karela is a popular Jain recipe consists of an unique combination of bitter gourd and cashew nut. This Karela Nu Shaak is comparatively less bitter as we have used cashew nuts in it. And is it contains no onion an garlic this recipe can be an excellent Jain recipe. Recipe: Ingredients:
  • 300 Grams Bitter Gourd (Karela)
  • ¾ Cup of Cashew Nuts (Kaju)
  • Juice of 1 Lemon
  • 1 Teaspoon Mustard Seeds (Rai)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • ¼ Teaspoon Asafoetida (Hing)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1-1.5 Teaspoon Dhana Jeera Powder
  • 1.5-2 Teaspoon Red Chilli (Lal Mirch) Powder
  • 1-2 Teaspoons of Sugar
  • Salt
Procedure:
  1. Remove the skin of the bitter gourd and chop it into lengthwise pieces.
  2. Add salt and lemon juice to it and mix well.
  3. Keep it aside for 10-15 minutes.
  4. Now squeeze the water out of the bitter gourd.
  5. Heat oil and add mustard seeds, cumin seeds, asafoetida and cashew nuts.
  6. Stir till the cashew nuts turn golden brown.
  7. Add the bitter gourd and stir well.
  8. Add turmeric powder, red chilli powder, dhana jeera powder and salt as per taste.
  9. Stir well and close lid to cook for 5-7 minutes on a low flame.
  10. Add sugar and mix well. Close lid and cook for another 3-5 minutes.
  11. Kaju Karela Nu Shaak is ready.
