Gajar Vatana Nu Shaak as name suggests consists of fresh carrots and green peas cooked in a peanut and coriander based gravy. This recipe is different from the usual Gajar Vatana Nu Shaak and can be a good alternative for your lunch. Unlike traditional Gujarati Gajar Nu Shaak this recipe has a different taste and should be tried at least once. Recipe: Ingredients:
  • 250-300 Grams Green Peas
  • 4-5 Lengthwise Chopped Carrots (Gajar)
  • ¼ Cup Coriander Leaves (Dhania)
  • ¼ Cup Roasted Peanuts (Singdana)
  • 4-5 Garlic Cloves (Lehsun)
  • 8-10 Green Chillies (Hari Mirch)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • ¼ Teaspoon Asafoetida (Hing)
  • 12-15 Curry Leaves (Kadi Patta)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • Salt
  • Water
  • Oil
Procedure:
  1. In a mixer make a paste of roasted peanuts, garlic and green chillies.
  2. Now heat some oil and cumin seeds, asafoetida, curry leaves and coriander leaves. Sauté it well.
  3. Now add carrots and green peas. Mix well.
  4. Add turmeric powder, previously prepared paste and salt. Mix well.
  5. Add water as per requirement and stir well.
  6. Close lid and cook for 5-7 minutes.
  7. Gajar Vatana Nu Shaak is ready.
