Dudhi Batata Nu Shaak is a Gujarati recipe in which bottle gourd and potatoes are cooked in traditional Gujarati spices and masalas. This recipe is without onion and garlic and hence it is a pure Jain Recipe. This Jain Dudhi Recipe can be a good recipe for lunch boxes and tiffins.

- 250 Grams Diced Bottle Gourd (Dudhi)
- 3-4 Diced Potatoes
- 1 Teaspoon Mustard Seeds (Rai)
- ¼ Teaspoon Asafoetida (Hing)
- 10-12 Curry Leaves (Kadi Patta)
- 2-2.5 Teaspoon Green Chilli-Garlic (Hari Mirch-Lehsun) Paste
- ½ Teaspoon Turmeric Powder (Haldi)
- 1-1.5 Teaspoon Dhana Jeera Powder
- 1.5-2 Red Chilli (Lal Mirch) Powder
- 1 Teaspoon Dal Shaak Masala
- Coriander Leaves (Dhania)
- Salt
- Oil
- Heat oil and add mustard seeds, asafoetida, curry leaves and potatoes.
- Stir the potatoes well.
- Add bottle gourd and mix well. Close lid and cook for 2-3 minutes.
- Add green chilli-garlic paste and stir well.
- Add turmeric powder, dhana jeera powder, red chilli powder, dal shaak masala and salt as per taste. Mix well.
- Cook for 3-5 minutes on a low flame with closed lid.
- Garnish with coriander leaves.
- Dudhi Bateta Nu Shaak is ready.
