Rice Kheer Recipe | Indian Diwali Dessert Recipe | Gujarati Rasoi

Rice Kheer is a traditional Kheer recipe often prepared on festive occasion like Diwali. This Diwali special recipe can be an excellent dessert recipe for your guests visiting you during Diwali. This Kheer recipe consists of dry fruits which give the kheer an excellent taste. Recipe: Ingredients:
  • 250 Grams Washed Basmati Rice
  • ½ Cup Grated & Roasted Dried Coconut
  • 1 Litre of Milk
  • 150 Grams of Sugar
  • 2-3 Teaspoons Cashew Nut (Kaju) Paste
  • 1-1.5 Teaspoons of Almond (Badam) Paste
  • Chopped Cashew Nuts (Kaju)
  • Chopped Almonds (Badam)
  • Salt
  • Water
Procedure:
  1. Heat ghee in a pressure cooker and stir fry the rice in it.
  2. Add some water to boil the rice and salt as per taste.
  3. Close lid & pressure cook for 2-3 whistles.
  4. Now let the rice cool and then blend it in a mixer.
  5. Add this rice paste in a deep bottomed utensil.
  6. Add milk and stir well.
  7. Add sugar and dissolve it.
  8. Add grated & roasted dried coconut, cashew paste and almond paste. Stir well.
  9. Add chopped cashew nuts and chopped almonds.
  10. Rice Kheer is ready. Serve it either hot or cold as per your taste.
