Malai Kofta Restaurant Style | Paneer Nu Shaak | Gujarati Rasoi

Malai Kofta is a popular Paneer recipe. This restaurant style paneer recipe has a different taste. The creamy malai and the spices blend beautifully and the nice soft koftas provide the necessary touch to the recipe. This kofta recipe is very easy to prepare and can be a nice dinner recipe.   • 250 Grams Grated Paneer
  • 3 Boiled & Grated Potatoes
  • 2 Tablespoon All Purpose Flour (Maida)
  • ½ Teaspoon Cardamom (Elaichi) Powder
  • ¼ Teaspoon Black Pepper (Kali Mirch) Powder
  • 1 Teaspoon Red Chilli (Lal Mirch) Powder
  • 12-15 Chopped Cashew Nuts (Kaju)
  • 8-10 Raisins (Kishmish)
  • Salt
  • Oil
For Gravy:
  • ½ Cup Cream (Malai)
  • ½ Cup Cashew Nut-Poppy Seed (Kaju-Khuskhus) Paste
  • 2 Teaspoons Butter
  • Paste of 2 Onions
  • 1 Teaspoon Green Chili (Hari Mirch) Paste
  • 1.5 Teaspoon Ginger-Garlic (Adrak-Lehsun) Paste
  • 1 Teaspoon Cumin Seeds (Jeera)
  • 4-5 Cloves (Laung)
  • 4-5 Black Pepper (Sabut Kali Mirch)
  • 2-3 Cinnamon Sticks (Dalchini)
  • 2 Bay Leaves (Tej Patta)
  • 2-3 Cardamom (Elaichi)
  • 1.5-2 Teaspoon Dhana Jeera Powder
  • 1-1.5 Teaspoon Dried Fenugreek Leaves (Kasuri Methi)
  • Salt
  • Water
  • Oil
Procedure:
  1. In a mixing bowl, take grated paneer, boiled & grated potatoes, cardamom powder, black pepper powder, red chilli powder, chopped cashew nuts, raisins, flour and salt.
  2. Mix well and prepare a dough.
  3. Make Koftas out of the dough.
  4. Deep fry the koftas in oil.
  5. Now for gravy heat some oil and add butter to melt.
  6. Add cumin seeds, cloves, black pepper, cinnamon sticks, cardamom and bay leaves. Sauté it well.
  7. Add onion paste and stir till it turns golden brown.
  8. Add green chili paste and ginger garlic paste. Stir well.
  9. Add cream, cashew nut-poppy seed paste and mix well.
  10. Add dhana jeera powder, dried fenugreek leaves and mix well.
  11. Add water as per requirement and salt. Mix well.
  12. Close lid and cook for 3-5 minutes.
  13. Place koftas in a plate and add the gravy on top.
  14. 14. Restaurant malai kofta is ready to eat.
