Vagharelo Rotlo | Kathyawadi Recipe | Gujarati Rasoi

Vagharelo Rotlo is an excellent recipe for leftover Bajra Na Rotlas. In this recipe we temper the Rotlo with red chillies, mustard seeds and add some traditional spices. This recipe is prepared in buttermilk which gives a nice sour taste to the recipe. The spiciness of red chillies and sourness of buttermilk gives the ordinary Bajra No Rotlo an excellent taste.   • 3 Bajra Na Rotlo
  • 1.5 Cup Salted Buttermilk
  • 1 Teaspoon Mustard Seeds
  • ½ Teaspoon Asafoetida (Hing)
  • 2-3 Dried Red Chillies
  • 8-10 Curry Leaves
  • 1.5 -2 Teaspoon Garlic- Green Chilli Paste
  • ½ Teaspoon Turmeric Powder
  • 1.5 -2 Teaspoon Red Chilli Powder
  • Coriander Leaves
  • Water
  • Salt
  • Oil
Procedure:
  1. Heat some oil and add mustard seeds, hing, dried red chillies and curry leaves.
  2. Now add garlic- green chilli paste and fry well.
  3. Add turmeric powder and stir well.
  4. Now add the salted buttermilk and mix well.
  5. Add water as per requirement.
  6. Stir till the mixture starts to boil.
  7. Now add red chilli powder and salt. Mix well.
  8. Add pieces of leftover Bajra No Rotlo.
  9. Close lid and cook for 2-3 minutes.
  10. Open lid and add some coriander leaves.
