Thai Red Curry | Thai Recipes | Gujarati Rasoi

Asian cuisine is incomplete without Thai food and especially the world famous Thai Red Curry. Thai Red Curry is characterised by the taste of red chillies, lemon grass and coconut milk. This is easy to make Thai Red Curry Recipe is prepared for ingredients easily available at home. The recipe also includes the recipe to prepare thai red curry paste which is then used to make thai red curry. To add a twist to the recipe we have added babycorn and paneer to the traditional vegetarian thai red curry. This curry is best enjoyed with steamed rice.   • 200 Grams Cottage Cheese (Paneer)
  • 5-16 Baby corns juliennes
  • 1 Cup Coconut Milk
  • 8-12 Basil Leaves
  • 10-12 Soaked Red Chilies
  • 1 Chopped Onion
  • 8-10 Garlic Cloves
  • 1 Inch Ginger
  • 1 Teaspoon Lemon Rind
  • 8-10 Coriander Stalks
  • 5-6 Chopped Lemon Grass
  • 10-12 Black Peppercorns
  • 1.5 Teaspoon Roasted Coriander Seeds
  • 1 Teaspoon Roasted Cumin Seeds
  • Lemon Juice
  • Salt
  • Oil
Procedure:
  1. In a grinder make a paste of soaked red chillies, chopped onion, garlic cloves, ginger, lemon rind, coriander stalks, lemon grass, peppercorns, roasted coriander seeds, roasted cumin seeds and lemon juice. Our Thai Red Curry Paste is ready.
  2. Heat oil and stir fry this paste.
  3. Add cottage cheese cubes, baby corn and stir well.
  4. Add coconut milk, water, salt and mix well.
  5. Add 8-12 roughly cut basil leaves and mix well.
  6. Thai Red Curry is ready to relish.
