Surti Sev Khamani | Surat Street Food Recipe | Gujarati Rasoi

Sev Khamani is a popular street food of Gujarat and is prepared using leftover Khamans. In this recipe we have also shown how to prepare Khaman at home for Sev Khamani. This Khamans are crumbled and then sautéed in tadka and then topped with some sev and pomegranate seeds. So do try out this Surat Street Food recipe at home. Recipe: Ingredients:
  • 1 Cup Chana Dal
  • 1-1.5 Teaspoon Green Chilli-Ginger (Hari Mirch-Adrak) Paste
  • ½ Teaspoon Baking Soda
  • 1 Teaspoon Oil
  • 1 Packet Eno
  • 8-10 Curry Leaves (Kadi Patta)
  • 4-5 Lengthwise Chopped Green Chillies (Hari Mirch)
  • 1 Teaspoon Mustard Seeds (Rai)
  • ½ Teaspoon Asafoetida (Hing)
  • 1 Teaspoon Sesame Seeds (Safed Til)
  • Juice of 1 Lemon
  • ½ Teaspoon Turmeric Powder
  • 1 Teaspoon Sugar
  • Coriander Leaves (Dhania)
  • Sev
  • Pomegranate Seeds
  • Salt
  • Water
Procedure:
  1. Soak chana dal for 6-7 hours and then grind it in a mixer.
  2. Add green chilli- ginger paste, baking soda, salt and oil. Mix well.
  3. Add Eno and some water and mix vigorously.
  4. In a cooker take some water, place a stand and on it place a greased utensil.
  5. Pour the mixture in the utensil and spread it evenly.
  6. Close lid and cook for 20-25 minutes without whistle.
  7. Let the khaman cool down and the make crumbs out of it.
  8. Heat oil and add mustard seeds, asafoetida, sesame seeds, curry leaves and stir well.
  9. Now add green chillies, turmeric powder, sugar and lemon. Mix well.
  10. Add little water and mix well.
  11. Add the dhokla crumbs and mix well in the tadka.
  12. Add some coriander leaves.
  13. Serve Khamani in plate and add sev and pomegranate seeds.
  14. Sev Khamani is ready to eat.
