We have already enjoyed the traditional Gujarati Kadhi recipe and now we would like to present another Kadhi recipe in Gujarati language. Palak Kadhi is a yummy & healthy recipe as it consists of Spinach which is high in nutrients especially iron. This quick kadhi recipe can be enjoyed best with Vegetable Pulao.

Ingredients:
- 3-4 Cups of Buttermilk (Chaas)
- 1 Cup Finely Chopped Spinach (Palak)
- ½ Cup of Gram Flour (Besan)
- 1-1.5 Teaspoons Green Chilli- Ginger (Hari Mirch – Adrak) Paste
- 1 Teaspoon Cumin Seeds (Jeera)
- ½ Teaspoon Fenugreek Seeds (Methi ke Daane)
- ½ Teaspoon Asafoetida (Hing)
- 10-12 Curry Leaves (Kadi Patta)
- 3-4 Dried Red Chillies (Sukhi Lal Mirch)
- ½ Teaspoon Turmeric Powder (Haldi)
- 1 Teaspoon Red Chilli (Lal Mirch) Powder
- 1 Teaspoon Sugar
- Coriander Leaves (Dhania)
- Salt
- In buttermilk, add salt, sugar and gram flour. Whisk it well.
- Make sure no lumps are formed during whisking.
- Heat some oil and add cumin seeds, fenugreek seeds, asafoetida, curry leaves, dried red chillies & stir well.
- Now add chopped spinach and sauté it well.
- Close lid & cook for 2-3 minutes.
- Add green chilli-ginger paste, turmeric powder, red chilli powder and stir it well.
- Add the previously made buttermilk mixture and stir till it starts to boil.
- Garnish with some coriander leaves and Palak Kadhi is ready.
