Palak Kadhi Recipe | Gujarati Kadhi | Gujarati Rasoi

We have already enjoyed the traditional Gujarati Kadhi recipe and now we would like to present another Kadhi recipe in Gujarati language. Palak Kadhi is a yummy & healthy recipe as it consists of Spinach which is high in nutrients especially iron. This quick kadhi recipe can be enjoyed best with Vegetable Pulao. Recipe: Ingredients:
  • 3-4 Cups of Buttermilk (Chaas)
  • 1 Cup Finely Chopped Spinach (Palak)
  • ½ Cup of Gram Flour (Besan)
  • 1-1.5 Teaspoons Green Chilli- Ginger (Hari Mirch – Adrak) Paste
  • 1 Teaspoon Cumin Seeds (Jeera)
  • ½ Teaspoon Fenugreek Seeds (Methi ke Daane)
  • ½ Teaspoon Asafoetida (Hing)
  • 10-12 Curry Leaves (Kadi Patta)
  • 3-4 Dried Red Chillies (Sukhi Lal Mirch)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1 Teaspoon Red Chilli (Lal Mirch) Powder
  • 1 Teaspoon Sugar
  • Coriander Leaves (Dhania)
  • Salt
Procedure:
  1. In buttermilk, add salt, sugar and gram flour. Whisk it well.
  2. Make sure no lumps are formed during whisking.
  3. Heat some oil and add cumin seeds, fenugreek seeds, asafoetida, curry leaves, dried red chillies & stir well.
  4. Now add chopped spinach and sauté it well.
  5. Close lid & cook for 2-3 minutes.
  6. Add green chilli-ginger paste, turmeric powder, red chilli powder and stir it well.
  7. Add the previously made buttermilk mixture and stir till it starts to boil.
  8. Garnish with some coriander leaves and Palak Kadhi is ready.
