Handvo is a popular Guajarati delicacy which is prepared from various fermented dal and wholesome vegetable. This recipe is a complete meal recipe as it contains dal & vegetables. This popular Gujarati dish is fluffy like a cake and is very tasty. Handvo is enjoyed either with pickle or with milk.   • 3 Cups of Rice
  • ¼ Cup of Chana Dal
  • ¼ Cup of Tur Dal
  • 1 Cup Urad Dal
  • Buttermilk (Chaas)
  • 1 Finely Chopped Onion
  • 1 Cup Grated Bottle Gourd (Dudhi)
  • 1 Cup Grated Carrot (Gajar)
  • ½ Cup Finely Chopped Spinach (Palak)
  • ½ Cup Finely Chopped Coriander Leaves (Dhania)
  • 2 Teaspoon Green Chilli (Hari Mirch) Paste
  • 1 Teaspoon Ginger-Garlic (Adrak-Lehsun) Paste
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1-1.5 Teaspoon Red Chilli (Lal Mirch) Powder
  • ¼ Teaspoon Baking Soda
  • 1 Teaspoon Sugar
  • 1 Teaspoon Mustard Seeds (Rai)
  • ½ Teaspoon Asafoetida (Hing)
  • 1.5-2 Teaspoon Sesame Seeds (Safed Til)
  • 10-12 Curry Leaves (Kadi Patta)
  • 4-5 Dried Red Chillies (Lal Sukhi Mirch)
  • Salt
  1. Grind rice, chana dal, tur dal & urad dal and prepare the flour.
  2. Add salt as per taste and buttermilk as per requirement and prepare the batter.
  3. Ferment it for 8-10 hours.
  4. After fermentation, add green chilli paste, turmeric powder, red chilli powder, baking soda, sugar, chopped onion, grated bottle gourd, grated carrot, chopped spinach, chopped coriander leaves and salt. Mix the ingredients well.
  5. Now heat oil in a pan and add mustard seeds, asafoetida, sesame seeds, curry leaves and dried red chillies. Sauté it well.
  6. Pour the handvo batter in the pan and spread it evenly.
  7. Close lid and cook for 20-25 minutes.
  8. Using a plate turn the handvo and cook the other side for 15 minutes with closed lid.
  9. Handvo is ready to eat. Serve Gujarati handvo with milk or pickle.
