Kantola or Kantoda is a very nutritious vegetable which is available only in the rainy season. Kontola Nu Shaak is a tasty & healthy recipe to make. In this recipe Kantolas are cooked in traditional Gujarati masalas.

Ingredients:
- 500 Grams Chopped Spiny Gourd (Kantola)
- 2 Finely Chopped Green Chillies (Hari Mirch)
- 1 Teaspoon Carom Seeds (Ajwain)
- ½ Teaspoon Asafoetida (Hing)
- ½ Teaspoon Turmeric Powder (Haldi)
- 2 Teaspoons of Dhana Jeera Powder
- 2-2.5 Teaspoon Red Chilli (Lal Mirch) Powder
- 1 Teaspoon Sugar
- Coriander Leaves (Dhania)
- Salt
- Oil
- Heat oil & add carom seeds, asafoetida, green chillies, and turmeric powder and stir well.
- Now add chopped spiny gourd and mix well.
- Add salt as per taste and cook for 3-5 minutes with closed lid.
- Now add red chilli powder, dhana jeera powder and sugar. Mix well.
- Add some coriander leaves and Kankoda Nu Shaak is ready to eat.
