Patra is a popular Gujarati farsan recipe which is an integral part of Gujarati culture. Every Gujarati Farsan shop serves this popular steamed Patra. In this recipe a mixture of besan is applied to Patra leaves and rolls are prepared. These rolls are then steamed and are given a tadka of mustard seeds & sesame seeds. Gujarati Patra are garnished with grated coconut & coriander leaves.

Ingredients:
- 3 Cups Gram Flour (Besan)
- 1-2 Teaspoon Green Chilli-Ginger (Hari Mirch-Adrak) Paste
- 1 Teaspoon Red Chilli (Lal Mirch) Powder
- ½ Teaspoon Turmeric Powder (Haldi)
- ½ Teaspoon Asafoetida (Hing)
- 1 Teaspoon Jaggery (Gud)
- Some Tamarind Water
- 1 Teaspoon Mustard Seeds (Rai)
- 1 Teaspoon Sesame Seeds (Safed Til)
- Salt
- Oil
- Water
- In a mixing bowl, take some gram flour, turmeric powder, asafoetida, red chilli powder, jaggery, green chilli-ginger paste, tamrind water and salt. Mix them well.
- Add some water and make a thick paste.
- Now remove the stem of the patra leaves, wash them, wipe them and spread the mixture over it.
- Put another leaf in the reverse direction & apply the mixture.
- Similarly put two more leaves and apply the mixture.
- Fold the leaves from the sides, apply some mixture and roll it.
- Now in deep utensil, heat some water and place a greased hole sieve. Grease the hole sieve with oil.
- Place the rolls over the sieve and steam it for 20-25 minutes.
- Once the rolls are cooled, slice them.
- Heat some oil in a kadhai, add mustard seeds and sesame seeds. Give it a stir.
- Toss the sliced patras in the kadhai and fry it slightly from both sides.
- Gujarati Patra are ready to eat.
