Saragva Nu Shaak | Gujarati Shaak Recipe | Gujarati Rasoi

Saragva Nu Shaak is a traditional Gujarati recipe prepared by cooking Drumsticks in Curd with some traditional Gujarati spices. This traditional Gujarati shaak recipe has sour and spicy taste and is enjoyed with Rotlo or with rice. This Gujarati recipe is not only tasty but it is vey healthy as it contains nutritious saragva and curd. Recipe: Ingredients –
  • Boiled Drumsticks (Saragva)
  • 1 Cup Curd (Dahi)
  • 1 Tablespoon Gram Flour (Besan)
  • 1 Teaspoon Crushed Green Chillies
  • 1.5 Teaspoon Ginger Garlic Paste
  • 1 Teaspoon Mustard Seeds (Rai)
  • 1 Teaspoon Cumin Seeds (Jeera)
  • ½ Teaspoon Asafoetida (Hing)
  • 2 Teaspoon Dhana Jeera Powder
  • 1-1.5 Teaspoon Red Chilli Powder
  • 1 Teaspoon Jaggery
  • Salt
  • Oil
Method –
  1. In a mixing bowl take 1 cup of curd and ad 1 tablespoon of gram flour(besan).
  2. In this add water used to boiled drumsticks and whisk well. Make sure lumps are not formed.
  3. Heat some oil and add mustard seeds, asafoetida, and cumin seeds and let it crackle.
  4. Now add green chilli paste and ginger garlic paste. Sauté it for a while.
  5. Add dhana jeera powder, red chilli powder and mix well.
  6. Add the previously made curd mixture and mix well.
  7. Add salt as per taste and let the mixture boil.
  8. After a boil, add the drumsticks and jaggery.
  9. Mix well and cook for 2-3 minutes with closed lid.
  10. Add some coriander leaves.
  11. Saragva Nu Shaak is ready to eat.
