Shahi Dum Aloo, a perfect Royal Dish from the kitchens of India is a perfect feast for have. Along with Potatoes the recipe has the touch of cashews, cardamom, cream and hot Indian spices. This is a tasty and quick recipe straight from Punjab.

Ingredients-
For Onion-Garlic-Ginger Paste:
- 1 Inch of Ginger
- 2 Onions
- 8-10 Garlic
- Baby Potatoes
- 1 Cup of Tomato Puree
- ¼ Cup of SoakedCashew Paste
- ¼ Cup of Yogurt
- 1 Black Cardamom
- 2-3 Small sticks of Cinnamon
- ¼ Teaspoon of Turmeric Powder
- 2 Teaspoon Coriander-Cumin Seed Powder
- 1 Teaspoon Red Chilli Powder
- ½ Teaspoon Garam Masala
- ½ Teaspoon Fennel Seed Powder (Saunf)
- Salt
- Oil
- In a shallow bottomed utensil, deep fry the baby potatoes till they are completely cooked.
- Now prick these potatoes with a fork so that the masala enters into the potatoes well.
- In another utensil, take some oil and heat it.
- When oil is heated add black cardamom and cinnamon sticks. Sauté it well.
- Make a paste of onion, ginger and garlic. Add this paste and fry it well.
- Close the lid and cook for 5 minutes.
- Now add tomato puree and sauté it well. Again close the lid and cook for 5-7 minutes so that the tomato puree blends with the other ingredients.
- Add the turmeric powder, red chilli powder, coriander seed- cumin seed powder, garam masala and fennel seed powder.
- Mix the masalas well. Close the lid and cook for 2 minutes.
- Now add the ¼ cup of cashew paste and ¼ cup of yougurt.
- Mix the paste and yogurt well.
- Add the potatoes. Mix the potatoes well so that they are covered with the masala properly.
- Finally add water as per requirement, add salt as per taste and cook until it boils.
- Shahi Dum Aloo is ready. Enjoy with hot Parathas.
