Khandvi | Gujarati Farsan Recipe | Gujarati Rasoi

Khandvi is a traditional Gujarati Farsan loved by everyone. Though it seems difficult but Khandvi is an easy to make recipe. In this recipe we have cooked the khandvi batter in the cooker to simplify the process of cooking. The Khandvi rolls are topped with a tadka of til, hing, rai and kadi patta which gives a nice taste to the Khandvi. The freshness of coriander leaves blends perfectly with the Khandvi.   • 2 Cups Gram Flour (Besan)
  • 4 Cups Buttermilk (Chaas)
  • 1 ½ Teaspoon Green Chili- Ginger Paste
  • ½ Teaspoon Turmeric Powder
  • 1 Teaspoon Mustard Seeds
  • 1 Teaspoon White Sesame Seed
  • Pinch of Hing
  • 15-20 Curry Leaves (Kadi Patta)
  • Salt
Method –
  1. In a cooker vessel whisk 2 cups of besan with 4 cups of buttermilk.
  2. In this mixture add turmeric powder, green chili- ginger paste and salt as per taste.
  3. Whisk the ingredients well and pressure cook for 3-5 whistles.
  4. Once cooked whisk the batter and then spread it evenly and thinly on a flat surface.
  5. Let it cool and then cut long strips and sprinkle some coriander leaves.
  6. Roll the Khandvis gently and keep them aside.
  7. Now for the tadka, heat some oil and add mustard seeds, sesame seeds, hing and kadi patta.
  8. Pour this tadka over the Khandvis and Gujarati Farsan Khandvi is ready.
