For Ragda:

  • 150 Grams Boiled Safed Matar
  • 3-4 Boiled Potatoes
  • 1-1.5 Teaspoon Green Chilli Paste (Hari Mirch Paste)
  • 1-1.5 Teaspoon Ginger-Garlic Paste (Adrak Lehsun Paste)
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1 Teaspoon Red Chilli Powder (Lal Mirch)
  • 1 Teaspoon Dhana Jeera Powder
  • ½ Teaspoon Garam Masala
  • Salt

For Making Puris:

  • Maida
  • Salt
  • Oil
  • Water

For Serving:

  • Green Chutney
  • Kokum-Gud Chutney
  • Chopped Onions
  • Chopped Spring Onions
  • Sev
Procedure:
  1. Heat oil and green chilli paste and ginger garlic paste. Stir fry the paste for a while.
  2. Now add boiled and dice potatoes and boiled safed matar.
  3. Now add turmeric powder, red chilli powder, dhana jeera powder, garam masala and salt as per taste. Mix well.
  4. Let the mixture come to a boil. Ragda for Aloo Puri is ready.
  5. Knead firm dough of maida, salt, oil and water. Let it rest for 15-20 minutes.
  6. Take some portion of the dough and roll it into a big roti.
  7. With the help of a small bowl cut puris from the roti.
  8. Deep fry these puris in oil.
  9. Place the puris in a plate and pour some ragda on it.
  10. Add some green chutney, kokum-gud chutney, chopped onions, sev and some chopped spring onions.
