Handvo | Traditional Gujarati Recipe | Gujarati Rasoi

Handvo is a popular Gujarati dish and is prepared using lentils and vegetables. In this Handvo recipe we have used Bottle Gourd (Dudhi) but you can use any starchy or leafy vegetables as per your choice. This traditional Gujarati recipe is enjoyed with pickle and is even eaten with milk. Recipe: Ingredients:
  • 3 Cups of Rice
  • ¼ Cup Chana Dal
  • ¼ Cup Tur Dal
  • 1 Cup Urad Dal
  • 500 Grams Grated Bottle Gourd (Dudhi)
  • Buttermilk (Chaas)
  • 1-1.5 Teaspoon Green Chilli Paste (Hari Mirch Paste)
  • 1-1.5 Teaspoon Ginger-Garlic Paste (Adrak Lehsun Paste)
  • 1 Teaspoon Soda
  • 1 Teaspoon Sugar
  • ½ Teaspoon Turmeric Powder (Haldi)
  • 1-1.5 Teaspoon Red Chilli Powder (Lal Mirch)
  • 3-4 Dried Red Chillies (Sukhi Lal Mirch)
  • 10-15 Curry Leaves (Kadi Patta)
  • 1 Teaspoon Mustard Seeds (Rai)
  • ½ Teaspoon Asafoetida (Hing)
  • 1-1.5 Teaspoon Sesame Seeds (Til)
  • Coriander Leaves (Dhania)
  • Salt
Procedure:
  1. Grind rice flour, chana dal, tur dal and urad dal and make the handvo flour.
  2. In this flour, add salt as per taste and buttermilk to make a thick batter.
  3. Ferment it for 8-10 hours.
  4. After fermentation, add green chilli paste, ginger garlic paste, soda, sugar, grated bottle gourd, coriander leaves and mix well.
  5. Add turmeric powder and red chilli powder to the batter & mix well.
  6. Now in a pan heat some oil, add mustard seeds, asafoetida, sesame seeds, dried red chillies and curry leaves. Stir well.
  7. Pour the batter and spread it evenly to form a thick layer.
  8. Close lid and cook for 20-25 minutes.
  9. Now using a plate flip the handvo and cook the other side for another 15 minutes.
  10. Handvo is ready to eat.
