Khichdi is a traditional Indian dish which recently got an honor to be the star dish at World Food India 2017. Khichdi is a common man’s food in India. It is prepared from rice and dal cooked along with some fresh veggies and traditional Indian tadka. This recipe enjoyed a lot by the Indian Prime Minister Shri Narendra Modi. Khichdi is prepared in various styles all over India but the most popular recipe is of the Gujarati Vaghareli Khichdi. Vaghareli khichdi is not only a tasty recipe but is also a wholesome meal for the body providing the necessary proteins, vitamins and other vital nutrients.   • 2 Cup Soaked & Drained Rice
  • 1 Cup Soaked & Drained Tur Dal
  • 1 Cup Peanuts
  • 1 Diced Potato
  • 1 Chopped Onion
  • 1 Chopped Tomato
  • 1 Teaspoon Green Chili Paste
  • 2 Teaspoon Ginger-Garlic Paste
  • 2-3 Bay Leaves
  • 2 Cinnamon Sticks
  • 3-4 Dried Red Chilies
  • 8 -10 Curry Leaves
  • 1 Teaspoon Mustard Seeds
  • ½ Teaspoon Turmeric Powder
  • 2 Teaspoon Red Chili Powder
  • 1 Teaspoon Sabji Masala
  • 2 Teaspoon Dhana Jeera Powder
  • Handful of Coriander Leaves
  • Oil
Method –
  1. Heat some oil and add bay leaves, cinnamon, dried red chilies and curry leaves.
  2. Add mustard seeds and chopped onion. Stir till the onion turns golden brown.
  3. Now add tomato and cook it well.
  4. Add green chili paste and ginger garlic paste and mix well.
  5. Add diced potato and then add turmeric powder, red chili powder, sabji masala and dhana jeera powder.
  6. Add the peanuts and stir well.
  7. Add soaked and drained rice and tur dal.
  8. Add salt as per taste.
  9. Add water to cook the rice and then add some coriander leaves.
  10. Cook for 3 whistles.
  11. Gujarati Vaghareli Khichdi is ready.
