Ghughra is a popular Gujarati farsan which is prepared by stuffing a mixture of peas cooked in traditional spices stuffed in a flour based puri. This recipe is often enjoyed in rainy season and can be found in gujarati wedding ceremonies. This Gujarati Farsan has peculiar spicy, tangy and sweet taste.   • 200 Grams Boiled & Mashed Green Peas (Matar)
  • 2-3 Teaspoon Grated Coconut
  • 1-1.5 Teaspoon Green Chilli-Ginger (Hari Mirch-Adrak)Paste
  • 1 Teaspoon Cumin Seeds (Jeera)
  • 1 Teaspoon Sesame Seeds (Safed Til)
  • ½ Teaspoon Asafoetida (Hing)
  • Juice of 1 Lemon
  • 1 Teaspoon Sugar
  • Salt
  • Coriander Leaves (Dhania)
  • Oil
For Covering:
  • 1 Cup All Purpose Flour (Maida)
  • Salt
  • water
  • Oil
Procedure:
  1. Heat oil and add cumin seeds, sesame seeds and let it crackle.
  2. Add asafoetida, green chilli-ginger paste and stir well for a while.
  3. Add boiled and mashed green peas and mix well.
  4. Add grated coconut, lemon juice, sugar, salt and mix well.
  5. Add some coriander leaves. Our stuffing is ready, let it cool.
  6. Make dough of flour, salt, oil and water.
  7. Take some portion of dough and roll it into a roti.
  8. Using a small bowl cut puris out of the roti.
  9. Stuff the cooked peas in the puris and close all the ends properly and twist them.
  10. Deep fry the ghughras well till golden brown.
