Dudhi Nu Shaak | Gujarati Shaak Recipe | Gujarati Rasoi

Doodhi or Bottle Gourd has various benefits like weight loss, nutrients, fibre, etc. This lauki ki sabji is prepared in traditional Maharashtrian style. This Maharashtrian recipe of bhopla or lauki consists of coriander, garlic and green chilies which give the green color to the sabzi.   • 250 Grams of Dudhi
  • 1 Cup of Coriander Leaves
  • 7-8 Garlic Cloves
  • 8-10 Green Chilies
  • 1 Teaspoon Coriander Seeds
  • ½ Cup Roasted Peanuts
  • 1 Teaspoon Mustard Seeds
  • ½ Teaspoon Cumin Seeds
  • Pinch of Asafoetida (Hing)
  • ½ Teaspoon Turmeric Powder
Method –
  1. Make a paste of garlic, green chilies, coriander seeds and roasted peanuts.
  2. Now in a kadhai heat some oil and add mustard seeds, cumin seeds, hing and coriander leaves.
  3. Stir well.
  4. Now add bottle gourd lauki to the kadhai and cook it well.
  5. When the lauki is cooked, add turmeric powder and mix well.
  6. Add the previously made paste to the lauki.
  7. Add water as per requirement and salt as per taste.
  8. Cook for 3-5 minutes and dudhi nu shaak is ready.
