Ringan Batata Nu Shaak | Gujarati Shaak Recipe | Gujarati Rasoi

Ringan Bataka or Baingan Aloo ki Sabzi is a famous everyday vegetable sabzi prepared in India. This recipe consists of baingan (brinjal) and aloo (potato) cooked in Indian masala without onion and garlic. This recipe is famous in Gujarat and is known as Ringan Bataka. Ringan Bataka is a recipe you would surely find at a dhabha in Gujarat. Recipe: Ingredients:
  • 250 Grams Diced Brinjal
  • 5-6 Diced Potatoes
  • 1 Diced Tomato
  • ½ Teaspoon Haldi
  • 2 Teaspoon Dhan Jeera Powder
  • 3 Teaspoon Red Chilli Powder
  • 1 Teaspoon Sabzi Masala
  • 1 Teaspoon Mustard Seeds
  • 1 Teaspoon Hing (Asafoetida)
  • 1 Teaspoon Jaggery
  • Salt
Method: 
  1. Heat oil and add sarson ke beej and hing. 
  2. Add the potatoes and some salt to cook the potatoes well. 
  3. Once the potatoes are cooked add the baingan (ringaan). 
  4. Add haldi, dhan jeera, lal mirchi powder and sabzi masala. Mix well. 
  5. Add salt and cook for 2-3 minutes. 
  6.  Add diced tomato and mix well. 
  7. Add jaggery and cook for a while. 
  8. Add water and stir well. 
  9. Add coriander leaves and cook till the sabzi boils. 
  10. Aloo Baingan, Ringan Bataka is ready to serve.
