Patra | Gujarati Farsan Recipe (Alu Vadi) | Gujarati Rasoi


Patra is famous Indian delicacy enjoyed largely in Gujarati community. Gram flour batter is applied to Patra leaves and the leaves are rolled and steamed. The rolls are then cut into slices and are shallow fried to make it crunchy and more tasty.
Recipe: Ingredients –
  • Patra Leaves
  • 4 Cups Gram Flour
  • 7- 8 Garlic Cloves
  • 10-12 Green Chilies
  • 1 Teaspoon Cumin Seeds
  • 2 Teaspoon Sesame Seeds
  • ½ Teaspoon Turmeric Powder
  • ½ Teaspoon Sugar
  • Juice of ½ lemon
  • Pinch of Asafoetida
  • Sea Salt
  • Water
Method -
  1. Make a thin paste of garlic cloves, green chilies, cumin seeds, turmeric powder, sugar, asafoetida and lemon juice.
  2. Now add this paste to 4 cups of gram flour, add 2 teaspoons of sesame seeds, add water and make a thick batter.
  3. Now, take a Patra leaf and apply this batter, place another leaf upside down on it and apply batter. Place two more leaves in similar fashion.
  4. Now fold the sides of the leaves and roll it to make a firm roll.
  5. Steam these rolls for around 20-25 minutes.
  6. Cut the roll into slices and shallow fry the slices.
  7. Patra is ready.
