Kothimbir Vadi | Mahrashtrian Recipe | Gujarati Rasoi

Kothimbir Vadi is a classic Maharashtrian snacks recipe which is enjoyed by one and all. As name suggests these vadis are prepared from coriander leaves and gram flour with some traditional Maharashtrian spices. Kothimbir Wadis can be either steamed or fried as per one’s preference. Shallow frying the wadis gives it a nice texture and a crispy taste. Kothimbir vadi is not a difficult recipe to prepare and hence it is a must try recipe if you are a snacks loves. Recipe: Ingredients –
  • 1.5 Cup Chopped Coriander Leaves (Kothimbir)
  • 2 Cups Besan (Gram Flour)
  • 1 Teaspoon Cumin Seeds
  • Pinch of Hing
  • Paste of 10-12 Green Chillies
  • 1 Teaspoon Ginger-Garlic Paste
  • ½ Teaspoon Turmeric Powder
  • 1 Teaspoon Red Chilli Powder
  • Salt
Method –
  1. Take some besan, add salt and make a thick batter.
  2. Heat oil and add cumin seeds, hing, green chilli paste, ginger garlic paste and mix well.
  3. Add turmeric powder and red chilli powder.
  4. Add chopped coriander leaves and let it cook for 3-5 minutes.
  5. Add salt as per taste and add the prepared batter.
  6. Mix well and let it cook for 5-7 minutes.
  7. Grease a plate with oil and remove the mixture on the greased plate.
  8. Spread it and let it cool.
  9. Cut it into vadis.
  10. Shallow fry the vadis and kothimbir vadi is ready to relish.
